Mini Breakfast Pizza’s

From the Farmhouse Kitchen!

I had left over tortilla’s and I needed to do something different for breakfast.
I could eat eggs every day, but others in my family like a variety!
My farmer will eat everything.
He will even eat things that are sometimes questionable.
I guess it comes from working so hard, and being grateful for each meal.
Really.
He never complains.
Even if it’s burned.
He says, “Oh good. I like it that way.”

People should take lessons from him.

This recipe is fun because you can use up those left over onions and peppers, maybe mushrooms.
Anything that you might want on a breakfast pizza.
I like the tortilla’s crunchy so I heat them ahead of time.
Sometimes just heating them on a pan works well too.

Mini Breakfast Pizza's
Course Breakfast
Prep Time 30 min.
Cook Time 10-15 mins
Servings
Ingredients
  • 1 tbsp maple syrup or honey
  • 1/2 c softened cream cheese
  • 1/2 c sour cream
  • 1 c chopped onion - toppings Or other ingredients you might like on a breakfast pizza, peppers, mushrooms, sausage, bacon, etc.
  • 1 c Shredded Cheese (I like mexican 3 cheese)
  • 1/2 c cream or milk
  • 4 eggs
  • salt and pepper
  • 1/4 tsp garlic salt or 1/2 clove of garlic chopped

  • 1 tbsp maple syrup or honey

Instructions
  1. Stir sour cream, softened cream cheese, and maple syrup together. Set aside. In a sauce pan cook onions, garlic or garlic powder, and other toppings until onions are translucent. (If you're adding any meats cook them separately. You can cook peppers, mushrooms, onions, garlic all together.) Stir eggs and milk together. Pour into pan. Cook over medium heat. Continually stirring. Sprinkle with salt and pepper. Set aside. To Assemble: Place 3 tortilla's on a cookie sheet. Place in a Preheated 350 degree oven just long enough to heat through. Flip once. About 3 minutes. Spread sour cream mixture on each tortilla. Add some scrambled egg on each tortilla. Add toppings. (Peppers, meats, etc) Sprinkle Shredded Cheese on each tortilla. Bake in a preheated oven to 350 degrees for 10-15 minutes. Slice as you would a pizza and enjoy!!!
