- 1 Cup Butter
- 1 Cup Brown Sugar
- 1/2 Cup White Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1 1/4 Cups Pumpkin Puree
- 1 1/2 Cups Chocolate Chips
- 2 1/2 Cups All Purpose Flour
- 1 1/2 Cups Quick Oats
- 1 tsp Baking Soda
- 1/4 tsp Ground Cinnamon

Instructions
- Preheat oven to 350. Combine flour, oats, baking soda and cinnamon in a bowl set aside. In mixer with paddle attachment mix together, butter, sugars and vanilla. Add pumpkin puree. Mix well. Slowly add dry ingredients just until mixed scraping sides. Add chocolate chips. Place by rounded spoonful on baking sheet. Bake for 10-11 minutes or until you say oops there's something in the oven! Best served with large amounts of coffee.
