Scrumptious Scones
I hear you! Scones conjure up thoughts of dry, flavorless blobs of cooked dough. An experience that leaves you searching for a liquid solution to the parched palette. But this recipe, I can assure you, is everything delicious!!! Made with butter and buttermilk these scrumptious scones are a wonderful addition to any meal! We love to have them for Breakfast. I serve Greek yogurt, granola and Strawberries and blueberries with the scones! And of course steaming hot cups of coffee.

  1. Mix all the dry ingredients with the butter. I mix in my stand mixer with the whisk attachment until well mixed. At this point I switch attachments to the flat beater. Then pour in the cold water slowly until it’s of the right consistency. At this point I may divide the dough. to do half chocolate chip and have cranberry, white chocolate chip. Often, I double the recipe. Once it is in a ball shape I add 1/2 c of dried Cranberries and 1/2 c of white chocolate chips and mix that well.(I usually use my hands, but you can use the mixer gently)  If the dough feels sticky add a bit of flour and mix with your hands.   I use a pizza stone to cook my scones. Form the scones into rounds about 4 in round and 1 inch high. Sprinkle with raw sugar.  I use a metal straight scoop to cut them into quarters. If you make a 6″ round cut into 6ths. Bake for 12-14 minutes. Looking for a golden brown. Remove from oven and let cool. Store in an air tight container. But they don’t usually last that long here. They freeze well.
  2. Gently mix in the cranberries and white chocolate chips.
  3. Separate the dough into three sections. Pat each section into a flat circle. I use a pizza stone for these scones. Sprinkle with raw sugar, Divide each section into 4ths. Separate so they are not touching.
  4. Bake in a preheated oven to 400° for about 15 minutes. Ovens are all different. Yours may need a little longer, or a little less.
  5. Let the scrumptious scones cook slightly before moving them to a serving platter.
  6. Fix a nice cup of coffee, invite a friend over and enjoy!
